Pumpkin Chocolate Chip Oatmeal Cookies

Pumpkin Chocolate Chip Oatmeal Cookies are gluten free and perfect for Autumn.

I am sharing these yummy and healthy Pumpkin Chocolate Chip Oatmeal Cookies recipe with you today!  They are actually nutritious enough to serve for breakfast! I like to call them breakfast cookies.  My son loves them!  I like that they packed full of fiber! With the pumpkin and oats you really can’t go wrong with these.

To prepare, mix all ingredients together except for chocolate chips and walnuts  in a large bowl. After combined, stir in chocolate chips and walnuts. Drop by the spoonful onto greased cookie sheet. Bake at 350 degrees for 10-12 minutes. Let cool for 2 minutes on cookie sheet Remove from pan to cooling rack. Store in an airtight container. I like to use my own Homemade Pumpkin Puree and my own Pumpkin Pie Spice.

These Pumpkin Chocolate Chip Oatmeal Cookies can be made with our without the chocolate chips. I like to use Enjoy Life brand. Ingredients

  • 3 cups quick cooking oats
  • 1/2 cup brown sugar
  • 1/2 cup milk
  • 2 TBSP oil
  • 2 eggs
  • 2 tsp baking powder
  • 3/4 teaspoon salt
  • 1 TBSP vanilla
  • 1 teaspoon pumpkin pie spice
  • 3/4 cup canned pumpkin
  • 3/4 cup chocolate chips
  • 1/2 cup walnuts

Instructions
