As you know we love family time and spending time with our children.  I also love to prepare recipes and cook at home. Quaker Oatmeal + it’s best friend – Milk provide a good source of protein for my family.  This is a great way to start off your day!

I personally love partnering Oatmeal + Milk because it = A Winning Combination filled with delicious and nutritious benefits!  I always make my oatmeal with low fat milk instead of water!  It is a great way to provide a good source of protein which is a great way to start your day!  You will not only get calcium from both, but also fiber and iron from the oatmeal and protein, potassium and vitamins D, A and B12 from milk!

I am sharing these yummy and nutritious Pumpkin Chocolate Chip Oatmeal Cookies with you.  They are actually nutritious enough to serve for Breakfast!  I love sending my family off to start their day with a nutritious and delicious meal packed with protein.  They can be made with or without the chocolate chips.  They are good for about 3 days in an airtight container due to their moistness.

Pumpkin Chocolate Chip Oatmeal Cookies

Prep Time:5 minutes
Cook Time:12 minutes
Total Time:17 minutes

Ingredients

  • 3 cups quick cooking oats
  • 1/2 cup brown sugar
  • 1/2 cup milk
  • 2 TBSP oil
  • 2 eggs
  • 2 tsp baking powder
  • 3/4 teaspoon salt
  • 1 TBSP vanilla
  • 1 teaspoon pumpkin pie spice
  • 3/4 cup canned pumpkin
  • 3/4 cup chocolate chips
  • 1/2 cup walnuts

Instructions

  • In a large bowl mix all ingredients together except for chocolate chips and walnuts.
  • After combined stir in chocolate chips and walnuts.
  • Drop by the spoonful onto greased cookie sheet.
  • Bake at 350 degrees for 10-12 minutes.
  • Let cool for 2 minutes on cookie sheet
  • Remove from pan to cooling rack.
  • Store in an airtight container.

    Oh my goodness! Your pumpkin chocolate chip oatmeal cookies sound delicious! My mouth is watering at the thought! I have a box of Quaker Oats in my pantry and a pumpkin in the fridge (no canned pumkin for me)… I may have to jump on it tonight!
