2poundsPork Tenderloins
Apricot Mixture:
1/4cupapricot preserves
2Tablespooncountry style Dijon mustard
1/2teaspoondried rosemarychopped
Instructions
Preheat oven to 425. Spritz a baking sheet with cooking spray. Place 2 tenderloins (1 pound each) on a baking sheet (leave about 2 inches of space between them).
Combine apricot mixture in a bowl
Brush each with apricot mixture.
Roast for 30 minutes or until desired doneness.
Remove from oven and let stand 5 minutes.
I cooked a 2 lb Roast and baked for 1 hour and 15 minutes and it turned out perfect.
