This is an easy gluten free quiche recipe that everyone will enjoy. I have made it with bacon, ham or even meatless. You can use any vegetables that you have on hand.

1 Pie Plate or Casserole Dish
Ingredients
8slicesbacon
4oz.shredded swiss cheese (1 cup)
1 1/2 cupsmilk
1/2 cupalmond flour
4largeeggs, lightly beaten
1/4cupfinely chopped onion
1cupcooked broccoli, finely chopped
2TBSPsalted butter, melted
1/2tsp. salt
1/4tsp.black pepper
Instructions
Cook bacon until done.
Drain bacon and crumble.
Preheat oven to 350 degrees. Lightly grease a 9-inch pie plate.
Line bottom of the plate with cheese and crumbled bacon.
Whisk together milk and flour in a bowl, then whisk in eggs, onion, butter, broccoli and salt and pepper.
Pour over the bacon and cheese.
Bake until set, 35 to 40 minutes. Cut into 6 slices and serve hot or cold.
Notes
You can use any vegetable or cheese of your choice. You can also use ham or eliminate the meat altogether.
