Sweet Potato Casserole is a family favorite recipe for the Holiday's!

Ingredients
3cupssweet potatoes, cooked or canned (I use a 29 oz. can, drained)
½cupbrown sugar
2largeeggs, beaten
½tspsalt
½stickbutter or margarine, melted
½cupevaporated milk
1 ½tspvanilla
Topping:
½cupbrown sugar
1/3cupflourKing Arthur brand if adapting gluten free
1/2cupchopped pecans
1/3stickbutter or margarine melted
Instructions
Mash sweet potatoes. Add sugar, eggs, salt, butter, milk and vanilla. Put mixture into an 8x8 casserole dish. Mix topping ingredients and spread over sweet potato mixture. Bake at 325 degrees for 30 minutes.
To double recipe: double all ingredients and bake in a 9x13 dish at 350 degrees 30 minutes or until top is brown and mixture no longer jiggles
