One of my favorite muffins recipes to make is Jelly Muffins. This recipe brings back fond memories for me. This is one of my students favorite food labs that we did!

Ingredients
2cupsall-purpose flour
1/2cupgranulated sugar
1tablespoonbaking powder
1/2teaspoonsalt
3/4cupmilk
1/3cupoil
1largeegg
12tsp.any flavor fruit spread, jelly, jam or preserves
Instructions
Heat oven to 400 degrees F.
Grease bottoms only of 12 muffin cups or line with baking cups.
In a medium bowl, combine flour, sugar, baking powder and salt; mix well.
In a small bowl, combine milk, oil and egg; blend well.
Add dry ingredients all at once; stir just until dry ingredients are moistened (batter will be lumpy.)
Fill cups 1/3 full.
Place 1 teaspoon any flavor jam, jelly, fruit spread or preserves in muffin tin.
Cover with remaining batter and be sure to seal the jelly.
Bake for 20 to 25 minutes or until toothpick inserted in center comes out clean. Cool 1 minute before removing from pan. Serve warm.
