Ingredients
1poundPeeled and Deveined Large Shrimp
1wholeLemon (Optional)
3ounceCream Cheese, softened
3tablespoonButter
2tablespoonParsley for garnish
17.76 ounceLa Costena Chipotle Sauce, if you can find a smaller can that is perfect. I only use about half! You can adjust to taste.
Instructions
Melt 2 tablespoons butter in a large skillet over medium-high heat.
Add shrimp to the skillet and stir occasionally until shrimp is pink, about 2-4 minutes.
Remove shrimp and set aside.
Add 1 tablespoon of butter to skillet.
Blend and continually stir together 3 ounces cream cheese and a little less than half the can of Chipotle sauce. Bring to slow boil. Reduce to medium heat for about 1 - 2 minutes.
Stir in shrimp and gently toss to combine sauce and shrimp. Cook another 1-2 minutes.
Remove from heat and move to a serving plate.
Squeeze desired lemon on top and garnish with parsley.
