Ingredients
18 lb bone-in spiral sliced half ham, any brand (I prefer Trader Joe)
8TBSPbutter, softened (I prefer Kerrygold) - unsalted is preferred when I have it.
1/4 cuphoney
13/4cups granulated sugar
1TBSPold bay seasoning
1tsponion powder
1tspground cinnamon
1/2tspground nutmeg
1/2tspground cloves
1/2tsppaprika
1/4tspground black pepper
1/4tspground sea salt
Instructions
Combine softened butter and honey whip until no longer separated. I prefer my butter is not melted as it is easier to apply to the ham.
Open ham and pat dry with paper towels.
Rub the honey butter over ham and in between some of the slices. Place into an electric roasting pan (or your oven) and cook on 325 for 2 hours (15 minutes per pound). Be sure to cover if it is in the oven with an aluminum foil tent.
Combine sugar and spices in a small bowl.
After the ham is done carefully remove from the electric roaster and transfer to a roasting pan covered with foil or use a disposable roasting pan.
Using a spoon place half of the sugar mixture all over the top of the ham.
Broil for several minutes, until the sugar mixture is bubbly and caramelized, then remove from oven.
While the ham is broiling, in a small saucepan, add the remaining sugar mixture and add 1/2 cup of pineapple juice.
Bring to a boil while stirring continuously. Boil for 2 minutes, then remove from heat.
Using a spoon pour the glaze over the ham, then broil again for up two minutes. Do not let it burn but my family enjoyed a slight dark caramelization. That is up to your desire.
Remove from oven and let ham rest for a few minutes and then serve warm.
