Ingredients
3cupspeachessliced
1cupblueberries
1/4cupsugar
1/4cupwater
1teaspoonvanilla extract
1cupnonfat plain Greek yogurt
1cupself-rising flour
Instructions
Preheat oven to 375 degrees.
Spray a 9"x13" baking dish with non-stick spray and set aside.
In a large bowl, mix together the flour, Greek yogurt, water and vanilla extract until it forms a dough.
Lightly flour a clean work surface and turn out dough onto surface. Roll to 1/2" thickness, and cut in half. Use 1/2 of the dough to cut long strips to go on the bottom of the baking dish. The other 1/2 of the dough can be cut into small pieces to place on top of the cobbler.
Use 1/2 the dough to place strips on the bottom of the baking dish. It will not cover the dish, but will just be a few strips on the bottom.
Pour peaches and blueberries on top of dough in baking dish, and sprinkle with sugar. You may mix together if preferred, but sprinkling on top works fine.
Top with remaining dough. May sprinkle additional sugar on top if wanted.
Bake at 375 degrees for 35 minutes.
