green bell peppers

cooked rice

(8 oz) peeled shrimp

each finely chopped onions and celery

chopped jalapeno peppers

melted butter or margarine

lemon juice

BKW Cajun Rub

of breadcrumbs
Instructions
Cut the peppers in half-lengthwise, remove seeds and membranes.
Cook in boiling salted water 2 to 3 minutes. Drain.
Combine rice, shrimp, egg, onions, celery, jalapeno peppers, 2 tbsp butter, lemon juice, and ½ tbsp Cajun Rub.
Fill pepper halves with rice mixtures.
Combine breadcrumbs and remaining Cajun Rub with remaining butter.
Sprinkle over peppers.
Bake at 350F for 30 minutes or until heated through.
Makes 6 servings.
