Cranberry Nut Bread with Orange Cranberry Delight

fresh cranberries

medium egg

orange juice
Orange Cranberry Delight Topping Ingredients

cream cheese
softened
1/2
cup
pecans
chopped
1/3
cup
sugar or splenda
1/4
cup
orange juice concentrate
1/2
cup
dried cranberries
chopped
Instructions
Bread:
Preheat oven to 350 degrees.
Mix flour, sugar, salt, baking powder, and baking soda in a large bowl.
Add cranberries and walnuts and stir to coat.
Combine the egg, oil, orange juice, and orange zest in a bowl and mix well.
Pour into the flour mixture and stir until blended.
Spoon into a greased 5x9 inch loaf pan.
Bake for 50 minutes or until a wooden pick inserted near the center comes out clean.
Cool in pan for 10 minutes.
Invert onto a wire rack to completely cool.
Orange Cranberry Delight Topping Directions
Beat the cream cheese in a mixing bowl until fluffy.
Add the orange juice concentrate.
Stir in pecans, cranberries, and sugar.
Chill, covered for 8-10 hours. Serve with crackers or Cranberry Nut Bread.
If using the Orange Cranberry Delight for a topping make the night before!
