1Medium Head Caulifloweror bag of riced cauliflower
1CupMix Stir Fry VegetablesBroccoli, Snap Peas, Carrots, etc.
1Egg
1TeaspoonSesame Oil
1TeaspoonOlive Oil
1/4TeaspoonGinger
1/2TeaspoonSalt
1/2TeaspoonBlack Pepper
1/2TeaspoonOnion Powder
1/2TeaspoonGarlic Powder
Instructions
Chop cauliflower into small florets. Place florets into food processor and pulse until the size of a grain of rice. (or use a bag of riced cauliflower)
Remove from processor and microwave for 1 minute.
Remove from microwave and pat off excess liquid. Set aside.
In large skillet, heat olive oil.
Add egg to skillet and scramble
Once egg has set, add in stir fry vegetables and cook stirring occasionally for 2-3 minutes or until just heated through.
Add in cauliflower, sesame oil and seasoning and blend well. Cook on high heat for 4-5 minutes or until cauliflower is cooked through and getting crispy.
