You have to try these Skinny Apply Pancakes. They are always a welcome treat for breakfast in our home, but these skinny apple pancakes make breakfast a super special event.

Ingredients
2cupflour (whole wheat or your favorite gluten free blend)
2teaspoonsbaking powder
1/2teaspoonsalt
2teaspoonscinnamon
1largeegg
1/4cupapplesauce
1cupdiet lemon-lime soda
1cupfat-free milk
1teaspoonvanilla extract
For Topping:
1wholeapple diced
1/2teaspoonbutter
1teaspoonsugaror preferred sugar substitute
1/2teaspooncinnamon
Instructions
Place ingredients for topping to the side.
Heat griddle using non-stick spray to prevent pancakes from sticking.
In large bowl, sift together flour, baking powder, salt and cinnamon
In medium bowl whisk together egg, applesauce, diet soda, milk and vanilla extract
Add wet ingredients to dry mix and blend until well incorporated. May add additional liquid (milk or soda) if you prefer a thinner blend.
Pour 1/3 cup pancake batter onto griddle and cook for 2-3 minutes on each side, flipping when bubbling and browned.
While pancakes are cooking, add apple, butter, sugar and cinnamon to microwave-safe bowl. Heat on high for 1 minute. Remove from microwave and check for tenderness. If apples are not tender, continue heating in 30-second increments until desired texture.
Serve pancakes with drizzle of maple syrup and spoon of apple topping.
