Slow Cooker Honey Lime Chicken and Butternut Squash
This slow cooker honey lime chicken and butternut squash was a HUGE hit at my house. Honestly, I had no idea how the butternut squash would hold up in the slow cooker, but I was surprised at how well it did.

Ingredients
1poundcubed butternut squash
1/3cupolive oil
2TBSPApple Cider VinegarI use Bragg's
1TBSPRaw HoneyI use local raw honey
4-6wholeboneless chicken breasts or boneless skinless chicken thighsI used 2 lbs
1wholefresh lime juiced or 2 TBSP Lime Concentrate - I use Santa Cruz
1tspdried garlic
1/4tspsalt/pepper
1/2cupchicken broth
Instructions
Salt and pepper your chicken breasts.on both sides
Add all ingredients to a freezer safe bag except chicken broth.
Freeze.
When ready to cook thaw in the refrigerator overnight.
Place into slow cooker and add 1/2 cup chicken broth.
Cook on low for 6-8 hours.
Notes
If you don't like Butternut Squash, you can use sweet potatoes.
