Ingredients
1smallpackage rice noodles (usually 10-12 ounce)
2cupsbroccoli florets
1wholered bell pepper, sliced
1wholekohlrabi, sliced into strips
2wholestalks celery, diced
1wholered or yellow onion, sliced thin
2clovesgarlic, minced
2teaspoonsolive oil
1teaspoonsesame oil
1teaspoonground ginger
1tablespoonmiso paste (found in refrigerated section of Asian stores)
1/4cuplow sodium soy sauce
1/4cupvegetarian mushroom flavored stir-fry sauce
Instructions
Place rice noodles in a pot of boiling water for 2 minutes. Remove, drain, and set aside.
In large wok or skillet, add olive oil, broccoli, bell pepper, kohlrabi, celery, and onion. Cook over medium heat, stirring occasionally, for 5-7 minutes or until vegetables are tender.
Add the sesame oil, miso paste, soy sauce, stir-fry sauce, and rice noodles. Mix all ingredients together until flavors combined. Cook for additional 3-4 minutes or until heated through.
